Vanilla Yoghurt with Roasted Plums

For a simple breakfast that can be prepared the night before, roasting a seasonal fruit like plums will make a delicious and healthy yoghurt topping. At this time of the year, plums are abundant in nutrients including immune boosting vitamin C, and vitamin B6, which is linked to regulating appetite, and improving sleep and concentration.

Recipe from: Fresh Fitness Food
Serves: 2

  • Ingredients

    3 plums, halved and pitted


  • ½ teaspoon cinnamon


  • ½ cup ricotta cheese


  • ½ cup Greek yoghurt


  • ½ vanilla pod

Method:

Preheat oven to 200 degrees and place the plums cut-side up, in a single layer on the baking dish. Sprinkle cinnamon over the plums and bake in the oven for approx 15-20 minutes. Blend the ricotta cheese till smooth and then mix in the Greek yoghurt and vanilla pod. Allow the plums to cool and then serve with vanilla yoghurt.
