Brighten up your breakfast with this refreshing smoothie bowl made with mango, banana and lime. Dedicated vegan? Try swapping the honey for coconut nectar or maple syrup.
Drain the mango, retaining the juice. Place the mango and banana in a blender. Blitz until smooth, adding as much mango liquid as you need to achieve a silky smoothie like consistency. Taste, and add a squeeze of lime or a spoonful of honey to taste, to add sharpness or sweetness as needed. Divide between two bowls (at this stage, you can place one portion in a sealed container in the fridge and save it for the next day if you wish). Top with your choice of toppings and serve.
